Quick Cauliflower Soufflé

We’re in the middle of cauliflower season and we can’t get enough of this vegetable! Cauliflower is a cruciferous vegetable, which means that it is related to broccoli, kale, Brussels sprouts, cabbage and kohlrabi. It is high in vitamin C, folate (vitamin B9), low in carbs (although they are complex carbs, the better kind) and high in fiber. 

The biggest challenge with cauliflower is checking for bugs, especially when you avoid purchasing conventionally-sprayed cauliflower. 

My wife came up with this quick and easy cauliflower soufflé recipe. It takes about 30 minutes from start to finish and makes a very filling (and thrilling!) side dish that has a savory, cheesy flavor. For this recipe, we used white caulies, although the color doesn’t really matter. 

Ingredients

  • 1 medium cauliflower (steamed) 

  • 2 eggs

  • 1 medium onion 

  • 2 tablespoons nutritional yeast

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt 

Instructions

  1. Preheat oven to 350°F 

  2. Mix all the ingredients together in a bowl 

  3. Line a rectangular or circular souffle dish with parchment paper 

  4. Bake for 20 minutes or until top is slightly browned
