Ever tried a smoked salmon Wasa tartine?

Until I was 40, I used to eat lots of bagel-and-lox sandwiches for lunch. I'd grab an onion bagel, slather on the cream cheese, lay down the lox, add some onions and tomato and chow away. The problem is that all the carbs from the bagel, plus the dairy in the cream cheese, effectively left me in a stupor all afternoon.

So I stopped eating it.

I missed bagels and cream cheese for a long time.

But I've come up with an alternative that excites me even more!

Meet the Smoked Salmon Wasa Tartine

What is a tartine? In France, a tartine is a slice of bread with a sweet or savory topping, also known as an open-faced sandwich.

Why substitute sourdough Wasa for bagels made from refined white flour? Wasa is crispy and light, made from whole rye grain and low in sodium and gluten. The end result is a lighter, tastier snack that has less sugar and fewer carbs than a huge, starchy bagel.

Slather on a creamy spread, then throw on some salty wild Alaskan smoked salmon. Then top with sweet orange grape tomatoes, a slice of creamy Haas avocado, a handful of tangy chopped red onion, some sprigs of aromatic flat leaf parsley. You’ve got yourself an easy-to-prepare finger-food lunch that will get the stomach juices flowing for you or your stay-at-home, Zoom-schooled kids.

I call it the smoked salmon Wasa tartine. It’s a cinch to prepare.

The Ingredients

  • 2 sourdough Wasa crackers (Whole Foods)

  • Kite Hill almond cream cheese (Whole Foods) (or substitute Primal Kitchen avocado mayonnaise for an even more tangy flavor)

  • A piece of wild Alaskan smoked salmon (Trader Joe’s or Kirkland) to cover each cracker

  • Sliced avocado (Underwood)

  • A bit of red onion (Gaetan Family Farms)

  • A handful of orange grape tomatoes (Sunrise Organic Farm)

  • Several sprigs of parsley (Underwood)

The Instructions

  1. Slather cream cheese or mayonnaise onto the Wasa crackers

  2. Add toppings one at a time; slice tomatoes lengthwise, then lightly top with parsley

  3. Chomp away!
