Oven-Baked French Fries

Passive Prep Time: 70 minutes (soaking and baking)

French fries are one of those perennial snacks. You can use them for kids lunches, as a side dish at dinner – and even on Passover, when the healthy snack choices are fewer than during the rest of the year.

Making French fries in the oven is a lot healthier than frying them. However, you will need to take a few extra steps to ensure that they get crispy.

Ingredients

  • Organic russet potatoes (these crisp the best, although you can use any type that you can find)

  • Avocado oil (olive oil may also be used, but avocado oil is the most heat-resistant)

  • Seasonings like salt, pepper, garlic, oregano, basil and thyme

Instructions

  1. Preheat oven to 375°F

  2. Slice potatoes into 1/2-inch-thick wedges

  3. Soak the potato slices in cold water for at least 30 minutes

  4. Dry them very well so they do not steam up or get soggy while baking (drying them in between two towels should be adequate)

  5. Dip the potatoes in oil and seasoning

  6. Lay out the potatoes in a single on a piece of parchment paper on a baking sheet

  7. Bake for about 20 minutes

  8. Increase heat to 425°F and bake approximately 20 minutes longer (remove sooner if they are browning too much)
